Alternatively, red bean paste can be used directly in step 2.

Blend everything except chopped almonds and crispy coconut roll together.

Freeze for 24 hours.

Spin on LITE ICE CREAM (push down and re-spin if needed).

Add in almonds and spin on MIX-IN.

Optional: Sprinkle on crispy coconut roll flakes and serve immediately.

Nutrition Facts

Reflections

Overall Rating: ★★★☆☆

I’ve been wanting to experiment with red bean in ice cream for a while now! Red bean is such a classic Asian dessert filling and very nostalgic for me. This pint is subtly sweet and flavourful. The crunch from the almond is also very fun.

The Good (what went well):

Red bean is a power food: High protein, high fiber, antioxidants, and minerals. What more can an ice cream ask for!

The Bad (lessons learned):

Complicated and clashing flavours: I wanted to brighten the flavours a bit but the lemon juice seems to have clashed with the earthy flavours.

Almond extract: The mix of miso and almond extract can create a medicinal flavour. Almond extract is super strong and can be reduced to perhaps a couple of drops.

E3.1 Roasted Campfire

Taste

Macros

Ease

★★★★☆

★★★☆☆

★★☆☆☆

Recipe

Ingredients for a 24-oz pint:

Japanese sweet potato (315g / ~6 medium)

Cocoa powder (3 tbsps)

Cinnamon, ground (¼ tsp)

Miso, white, reduced-sodium (1 tsp)

Milk, 2% fat, ultra-filtered (1 ½ cups)

Golden monkfruit sweetner with allulose (¼ cup)

Xanthan gum (⅛ tsp)

Lotus Biscoff cookies (2 cookies)

Instructions:

Poke the sweet potatoes with a fork and bake at 375°F for 45–60 minutes until it can be easily pierced.

Let the sweet potatoes cool and peel.

Blend everything except the Lotus Biscoff cookies together.

Freeze for 24 hours.

Spin on LITE ICE CREAM.

Add in the Lotus Biscoff cookies and spin on MIX-IN.

Nutrition Facts

Reflections

Overall Rating: ★★★☆☆

Roasted sweet potatoes and s’mores by the campfire is one of my summer core memories. This pint is chocolatey, sweet, thick, and smokey. The mixed in cookies also add a great crunch to the texture.

The Good (what went well):

Baked sweet potatoes make great bases: The texture is so smooth and creamy, thick like a Wendy’s Frosty. It’s very satisfying to eat.

A touch of cinnamon: The cinnamon brought the flavours together by bridging the sweet and savoury.

The Bad (lessons learned):

The cookies still crumbled: The Lotus Biscoff cookies completely shattered again. I thought they would be okay this time since I kept them whole during the MIX-IN spin. It seems like they need to be either pre-frozen, added on the side of the pint instead of the middle, or mixed in by hand.

C3.1 Coffee Date

Taste

Macros

Ease

★★★★☆

★★★★★

★★★★☆

Recipe

Ingredients for a 24-oz pint:

Espresso, instant (10.8 g / ~2 tbsps)

Dates, pitted (60 g / ~10 small)

Milk, 2% fat, ultra-filtered (2 ½ cups)

Miso, white, reduced-sodium (1 tsp)

Golden monkfruit sweetner with allulose (2 tbsps)

Xanthan gum (¼ tsp)

Vanilla extract, pure (1 tsp)

Instructions:

Blend everything together.

Freeze for 24 hours.

Spin on LITE ICE CREAM (push down and re-spin with a splash of milk if needed).

Nutrition Facts

Reflections

Overall Rating: ★★★★★

There’s almost nothing I would change about this pint (immediate winner for Celine’s Choice)! Every rich and creamy bite is accompanied by the aroma of freshly pulled espresso.

The Good (what went well):

Decaf espresso: Enjoy the pint at night by using decaf instant espresso! It tastes just as good without the worry of caffeine too close to bedtime.

The Bad (lessons learned):

More flavour layers: The strong coffee taste is amazing, but could be a bit flat. A little more sugar and salt would help round it out.
